What kind of background is better to do online for text?

It seems to me, often before used beige, pastel colors, and now it began to use white background + black text. What is the reason? What are the problems with perception when using a slightly grey background? Maybe gray letters stronger blur.

The only rule is that text needs to be enough contrast, so you don't have to strain your eyes when reading.
