A bit depends on the database.
For Sql Server there are:

query() – retrieves fragments of XML documents;
value() – extracts the values of specific nodes and attributes of XML documents;
exist() – used to test for the existence of the node or attribute.
modify () changes the XML document;
nodes() – splits an XML document into multiple strings at the nodes.

Within all these functions, you can use XPATH expressions.

The expression FOR XML PATH is used to generate XML from a query.
