Do I understand correctly that the conventional Ubuntu has no significant differences from the server except the lack of a visual interface?

Desktop Ubuntu server is different from the pre-installed ubuntu-desktop
If on a clean Ubuntu server to do
sudo apt install ubuntu-desktop
then get a clean desktop with the gnome and other x's the charm
Gnome Shell would be correct.
