Solution
You can use two versions at the same time.

  1. To set up a separate socket for PHP 5.6: "listen" in /etc/php/5.6/fpm/pool.d/www.conf
  2. Run a separate PHP 5.6 service: sudo service php5.6-fpm start
  3. In Nginx /etc/nginx/sites-enabled for the site to specify a processor above the socket
