In dev mode everything works fine, but the prod site returns a 500 error.

All the same make sure put write (var/logs, var/cache), because it sounds like the application cannot write to the cache or log files.

Open the front controller (web/app.php or public/index.php) and add: error_reporting(E_ALL) or whatever you need. But generally speaking, you need logs to fix it.
