The letters are not stored Dovecot IMAP?

There is a system of Ubuntu Server 16.04 c mail server (Postfix+Dovecot+MySQL)

The problem is that clients (ThunderBird) periodically doesn't want to save sent emails.

Read the documentation on your version of dovecot. Not worth the stupid copy-paste, or updated without reading ReleaseNotes. In the first case, using an older plugin which does not generate you the necessary folders to the Thunderbird folders, the second did not specify a CA certificate, in the third changed the configuration file format, and encryption is now specified in a different way.

And learn to use Google.

Solution
At least you have the old version of the config, what you dovecot and reports. Convert config to new format, leave plenty of warnings from the log, and will be easier to understand what the problem is.

From the logs you quoted are no such problems connected with the PRESERVATION of letters in a box, you should not.
