How to configure Mikrotik that would not have to be a gateway for the vpn client?

Impossible. The client chooses the gateway.
The only solution is to prohibit routing to the outside via a tunnel that would customers itching and changed the settings.

Think you can run the script with route commands (or whatever they are called in Windows) to set the desired routes after the connection is established.
